Sited in a converted carriage house (and previous home to the Gracie family of Gracie Mansion), Rouge Tomate is sleek and inviting, with brick and reclaimed wood (some of it salvaged from Hurricane Sandy debris) intermingling to create a sort of urbane farmhouse mien. The staff may verge on casual, but they are as amicable as ever. The raison d'être here is S. P. E. (Sanitas Per Escam) or “health through food. ” Picture ethically raised meats, seasonal produce, and minimal dairy accompanied by mocktails, fresh juices and biodynamic wines. Sold? Dinner may even unveil surprises like roasted, free-range chicken served over barley with roasted squash, Treviso and miso-caramel sauce; or wild Alaskan halibut with sugar snap peas and delicious pickled leeks.
