This kaiseki restaurant originated in Kyoto. It was founded in 1902 when Tomejiro Tsuji learned chakaiseki from the head of the Urasenke tea ceremony school. The fare follows the principle of ‘one soup, three sides’, with several items added as a touch of friendly service. With simple beauty as its purpose, the fare is matched with serving-ware of appropriate colour and shape.
