It is now a quarter-century since Koji Shimomura returned to Japan from France. As someone who has travelled with French cuisine through many transitions, he is a firm proponent of going “forwards and deeper”. He seeks out new ingredients with which to create original cuisine and goes deeper by constantly tinkering with his long-standing specialities, deepening his knowledge and skill. Each new edition impresses, keeping an eye on the horizon while respecting the classics.
