Chef Rubén Cuesta proposes a creative cuisine with a deep-rooted local flavour, based on local produce and centred around a unique tasting menu called Kamezí (there are two wine pairing options: Canario or Descubrimiento), with dishes as surprising as the squid with lemon and chili pilpil, avocado, cauliflower and chocolate, or the incredible prawns (also the exclusive cardinal prawns) from La Santa, which are caught at great depth by the Oliveros family.
