Open since 1960, this cash-only institution in northwest Philadelphia remains an essential stop for a proper cheesesteak. The setup is simple: Order at the window, wait to hear your name and eventually make your way to one of the few nearby tables on the sidewalk. The menu is lengthy, but everyone is here for the same thing. A long, soft hoagie roll arrives packed with tender chopped steak bound with melty cheese whiz and topped with a smattering of fried onions. Crushed hot peppers are an optional but necessary complement to this indulgent sandwich.
