Anyone familiar with Japan and with the challenges faced when setting up a restaurant, will appreciate the complexities posed by Buri Omakase, where you have to ring the bell to property 002 in a small office block, and are then escorted by lift up to the authentically decorated dining room with seating for just 10 guests. There’s just one sitting (which starts at 8.30pm), so make sure you arrive on time to avoid unwelcome glances from other diners! Here, the owner-chef is inspired more by the traditions of Kyoto rather than Edomae, hence the prevalence of dishes prior to the nigiri courses, including an excellent miso soup and a creamy “chawanmushi”. For the nigiri, this chef uses high-quality local fish caught by trusted fishermen, while the rice is the Koshihikari variety from Niigata, famous for its excellent quality. As tradition dictates, the chef starts with fish with a gentle flavour, which then gradually intensifies through the course of the meal. An authentic experience in every sense!
